BEEF RENDANG

INGREDIENTS :

  • 400 gm sirloin
  • Shallots : 70 grams
  • Garlic : 35 grams
  • Red chillies : 50 grams
  • Shrimp paste : 3 grams
  • Fresh ginger : 8 grams
  • Turmeric fresh : 1 cm
  • Candle nuts / 5 grams
  • Cumin : 1 tablespoon
  • Lemongrass : 1 stick
  • Brown sugar : 10 grams
  • Coriander seeds : 1/2 tablespoon
  • Black pepper : 1/2 tablespoon
  • White pepper : 1/4 teaspoon
  • Cardamon : 2 pcs
  • Cinnamon sticks : 3 gram
  • Star anise : 1 pc
  • Bay leaves : 2 pcs
  • Cafir lime leaves : 3 pcs
  • Sweet soy sauce : 6 tablespoon
  • Roasted coconut : 10 grams
  • Coconut cream : 100 ml
  • Chicken stock : 200 ml
  • Salt and pepper to taste

 

 

METHOD :

  • Roast the dry spices as in the video, then gently fry the wet spices and set aside.
  • Combine all ingredients except, star anis, Cinnamon stick, cardamom, lemongrass, bay leaves & lime leaves, and blend.
  • Sautee mixture for 2 minutes on low heat and then add the beef in thin slices.
  • Then add all other ingredients and cook for about 1 hour on a very low heat until the meat is tender. Stir every few minutes
  • Serve with steamed rice accompanied with a banana relish

 

BANANA RELISH:

 

Ingredients :

  • Banana : 1/2 piece
  • Fresh grated coconut : 1 tablespoon
  • Lime juice : 1 teaspoon
  • Chopped fresh coriander
  • Salt and pepper to taste

 

Method:

  • Peel and dice the banana
  • Add grated coconut, lime juice & chopped coriander leaves
  • Add salt and pepper to taste.

 

 

GARNISH :

  • Fried onions
  • Chopped parsley
  • Parsley
