BEEF RENDANG
INGREDIENTS :
- 400 gm sirloin
- Shallots : 70 grams
- Garlic : 35 grams
- Red chillies : 50 grams
- Shrimp paste : 3 grams
- Fresh ginger : 8 grams
- Turmeric fresh : 1 cm
- Candle nuts / 5 grams
- Cumin : 1 tablespoon
- Lemongrass : 1 stick
- Brown sugar : 10 grams
- Coriander seeds : 1/2 tablespoon
- Black pepper : 1/2 tablespoon
- White pepper : 1/4 teaspoon
- Cardamon : 2 pcs
- Cinnamon sticks : 3 gram
- Star anise : 1 pc
- Bay leaves : 2 pcs
- Cafir lime leaves : 3 pcs
- Sweet soy sauce : 6 tablespoon
- Roasted coconut : 10 grams
- Coconut cream : 100 ml
- Chicken stock : 200 ml
- Salt and pepper to taste
METHOD :
- Roast the dry spices as in the video, then gently fry the wet spices and set aside.
- Combine all ingredients except, star anis, Cinnamon stick, cardamom, lemongrass, bay leaves & lime leaves, and blend.
- Sautee mixture for 2 minutes on low heat and then add the beef in thin slices.
- Then add all other ingredients and cook for about 1 hour on a very low heat until the meat is tender. Stir every few minutes
- Serve with steamed rice accompanied with a banana relish
BANANA RELISH:
Ingredients :
- Banana : 1/2 piece
- Fresh grated coconut : 1 tablespoon
- Lime juice : 1 teaspoon
- Chopped fresh coriander
- Salt and pepper to taste
Method:
- Peel and dice the banana
- Add grated coconut, lime juice & chopped coriander leaves
- Add salt and pepper to taste.
