- 20 GREEN PEELED PRAWNS
- 30 GR BLACK OLIVE
- 200 GR PENNE PASTA
- 30 ML WHITE WINE
- 1 TABLESPOONS VIRGIN OLIVE OIL
- 30 ML COCONUT CREAM
- 10 GM BUTTER
- 300 GR NAPOLITANA SAUCE
- 10 GR DICED GARLIC
- FRESH BASIL
- SALT & PEPPER
METHOD
HEAT THE PAN AND POUR IN THE OIL, BUTTER AND GARLIC
SAUTE UNTIL GARLIC JUST STARTS TO CHANGE COLOUR
ADD PRAWNS ON MEDIUM HEAT
WHEN PRAWNS HAVE CHANGED COLOUR ADD TURN UP HEAT THEN ADD WHITE WINE
REDUCE WINE FOR 30 SECONDS
ADD NAPOLITANA SAUCE
WHEN BOILING TURN TO MEDIUM HEAT
ADD COCONUT CREAM, OLIVES, BASIL AND PRE COOKED PASTA
TOSS AND SERVE STRAIGHT AWAY
GARNISH WITH FRESH BASIL.
